# Co-Fermented Coffee

Co-fermentation adds a second ingredient, fruit pulp, spice, or cacao, into the fermentation tank alongside the coffee itself, rather than flavouring the beans after drying. Colombian producers lead the technique, and a well-made lot carries real sweetness and body with flavour notes that clearly echo whatever went into the tank.
